Chicken Tikka Biryani Recipe is the famous Indian delicacy of Punjabi Cuisine. Boneless Chicken is marinated in spicy mix of Yogurt and Spices, then cooked in the oven for making delicious homemade Tikka and finally mixed with Gravy and Long Grained Basmati Rice.

Ingredients and spices that need to be Prepare to make Chicken Tikka Biryani:

  1. For Chicken Tikka
  2. 1 kg Boneless Chicken
  3. 1 cup Yogurt
  4. 1 tbsp Ginger paste
  5. 1 tbsp Garlic paste
  6. 2 tbsp Tandoori masala
  7. 1 tsp Red chili powder
  8. 1/4 teaspoon Turmeric powder
  9. 1 tsp Lemon juice
  10. 1/4 tsp Orange food color
  11. 1 tbsp Oil
  12. to taste Salt
  13. For Gravy
  14. 1 Onion, sliced
  15. 1 Onion, finely chopped
  16. 1 Tomato, finely chopped
  17. 1/4 cup Yogurt, whipped
  18. 1/2 tsp Ginger paste
  19. 1/2 tsp Garlic paste
  20. 1 tsp Cumin seeds
  21. 1 Green Chili, finely chopped
  22. 1 tsp Red chili powder
  23. 2 Cardamom pods
  24. 1 inch Cinnamon
  25. 2 Cloves
  26. 1 tsp Garam masala powder
  27. 1/2 tsp Coriander powder
  28. as required Oil for deep frying
  29. 2 tbsp Ghee
  30. For Biryani
  31. as required Few Fresh coriander leaves, finely chopped
  32. strands Few Saffron
  33. 2 tbsp Milk
  34. 1 tsp Kewda essence
  35. 6-8 Fried Cashews
  36. For Rice
  37. 4 cups long grain Basmati rice
  38. 1/2 tsp Cumin seeds
  39. 1 Bay leaf
  40. to taste Salt
  41. 7 cups Water

Instructions to make to make Chicken Tikka Biryani

  1. Rinse the chicken pieces very well in running water and keep aside.
  2. Take a big bowl and mix yogurt, ginger paste, garlic paste, tandoori masala, red chili powder, turmeric powder, lemon juice, 1 tbsp oil, orange food color and salt to taste. Add washed chicken pieces and mix all the ingredients very well.
  3. Refrigerate covered preferably overnight for best results.
  4. Take out the chicken from the refrigerator and bring it on room temperature, mix again.
  5. Brush oil on skewers and thread the chicken pieces in it.
  6. Place the chicken skewers on to the grill and grill the chicken tikka̢۪s for about 30 minutes.
  7. Take out the chicken pieces from the oven and keep aside. Keep the marinade masala aside.
  8. Heat oil in a frying pan and deep fry 1 sliced onion on medium high flame for 3-4 minutes, till onion is medium browned.
  9. Drain the Brown Onions on paper napkins and keep aside, also soak few saffron strands in 2 tbsp milk and keep aside.
  10. For rice, rinse basmati rice in running water and soak them for about 20 minutes.
  11. Bring 7 cups of water on boils, add soaked rice, 1/2 tsp cumin seeds, lemon juice, 1 bay leaf and some salt.
  12. Cook till the rice are about 3/4 done, remove and strain all the water.
  13. For gravy, heat 2 tablespoon of oil in another pan and add whole spices, 2 cardamom pods, 1 inch cinnamon, 2-3 black peppercorns and 2 cloves.
  14. Add 1/2 teaspoon ginger paste and 1/2 teaspoon garlic paste. Stir fry, till the raw flavor goes away, and then add 1 finely chopped green chili and 1 finely chopped onion.
  15. Add chopped tomato, cook till tomato turns little mushy. Stir in 1/4 cup of fresh and whipped yogurt.
  16. Also add red chili powder, coriander powder, garam masala powder and salt tot taste. Cook continue for 2 minutes and then stir in half of the fried brown onions
  17. Cook together until the oil is released from the sides and then add reserved marinade, cook until the gravy thick and cooked through.
  18. Add about 1/2 cup of water, reduce the heat to low and then gently add the grilled chicken. Cover and simmer on low heat to cook the chicken through.
  19. Once the chicken pieces are fully cooked, adjust the salt and spices as per your taste and keep it aside for making biryani.
  20. Now for biryani, put half of the chicken tikka masala into the pan, add half of it cooked rice, then sprinkle the handful of fried onions and some chopped fresh coriander.
  21. Add half of the saffron milk and kewda.
