  1. 2 cups fresh green chana/ choliya
  2. 1 tsp salt
  3. 1 tsp sugar
  4. 3 cups water
  5. Green masala paste -
  6. 15 spinach leaves
  7. 1/4 cup coriander leaves
  8. 1/4 cup fresh green garlic
  9. 4 green chillies (medium spicy)
  10. 1 inch ginger
  11. Curry -
  12. 4 tbsp oil
  13. 1 bay leaf
  14. 1 dry red chilli
  15. 1 inch cinnamon
  16. 3 cloves
  17. 1/2 tsp cumin
  18. 1/4 tsp hing /asafoetida
  19. 1 onion finely chopped
  20. 1/2 tsp turmeric
  21. 1 tbsp coriander cumin powder
  22. 1 tsp garam masala
  23. Salt to taste
  24. 3/4 cup water
  25. 2 tsp lemon juice
  26. 2 tbsp coriander leaves
  27. 1 tbsp fresh green garlic
  28. 2 tbsp fresh cream

Instructions to make to make Chana Hariyali / Choliya Curry

  1. Boil water along with salt and sugar. Adding sugar helps to retain green colour. Now add green chana to it and cook it for 5 to 7 minutes or until done. Do not overboil it.
  2. To make green masala paste, add blanched spinach leaves, coriander leaves, fresh garlic, ginger and green chillies to a mixer jar and using little water make a smooth paste.
  3. Heat oil in a pan and add a bay leaf, dry red chilli, cinnamon and cloves. Now add cumin and let it brown. Add hing and finely chopped onion and saute it until light brown in colour. Now add green masala paste to it and mix everything well. Cook it on medium heat for 3 to 4 minutes. Now add turmeric, coriander cumin powder, garam masala and salt to it and give it a good mix. Cook it for a minute.
  4. Add boiled green chana to it along with 3/4 cup of water and give it a good mix. Cook on medium heat for 5 to 7 minutes. Now add lemon juice to it and turn off the heat.
  5. Garnish the curry with fresh coriander, garlic and fresh cream. Serve it hot along with roti / rice and salad.
