  1. Chicken marination
  2. 750 gm chicken (whashed and clean)
  3. 1 cup curd
  4. 1 tsp garam masala
  5. 1 tsp red chilli powder
  6. 1 tsp salt
  7. 1 tsp refined oil
  8. Rice prep
  9. 2 cup basmati rice
  10. 2 cinnamon stick
  11. 4 cardamom
  12. 1 star anise
  13. 2 bay leaves
  14. 2 tbsp oil
  15. 2 tbsp lemon juice
  16. 2 tbsp salt
  17. as required Water to boil rice
  18. For cooking chicken masala
  19. 2 onion sliced
  20. 2 medium tomato
  21. 2 tbsp ginger garlic paste
  22. 1 black cardamom
  23. 2 green cardamom
  24. 1 cinnamon stick
  25. 4 cloves
  26. 1 star anise
  27. 1/2 tsp caraway seeds
  28. 1/2 tsp turmeric powder
  29. 1/2 tsp mace and nutmeg powder
  30. to taste Salt
  31. 2 tbsp ghee
  32. Green chutney paste
  33. 1 cup Balanced spinach
  34. 1 cup mint leaves
  35. 1 cup coriander leaves
  36. 6-8 green chillies
  37. For layering
  38. 2 tbsp chopped mint leaves
  39. 2 tbsp chopped coriander leaves
  40. 2 green chillies chopped
  41. 1/4 tsp yellow food colour
  42. as required Lemon slice of 2 lemon
  43. 1/4 tsp garam masala powder to sprinkle

Instructions to make to make Hari Chutney Biryani

  1. First of all marinade the chicken with curd,garam masala, red chilli powder,salt and refined oil.
    Refrigerate it for at least 1 hour.
  2. Soak washed rice for 30 minutes in water, then boil it till 80% with the whole spices,salt,oil and lemon juice.
  3. Now in a wok heat ghee add in whole spice and sliced onion,sauté till onion turns light golden brown then add ginger garlic paste sauté till raw smell go.
  4. Add marinated chicken, turmeric,mace and nutmeg powder and cook on high heat until the masala releases oil,now add tomatoes,turns the heat low cover and cook till the chicken is tender.
  5. Mean while chicken is cooking we will prepare our green chutney by grinding blanched spinach,mint leaves,coriander leaves and green chillies to fine paste.
  6. Once chicken is cooked add in the green chutney to chicken mix it nicely and cook for few minutes on higher heat so it come to thick consistency, turn of the heat once cooked.
  7. Now spread the rice nicely on the cook chicken,add food colour,lemon slice,chopped coriander and mint leaves and sprinkle some garam masala and barista.
    Cover and turn on the heat on lowest to put on dum for 10- 15 minutes.
  8. Your hari chutney biryani is ready to serve hot with some salad,enjoy with your family and friends
