  1. For boiling dal
  2. 1 cup black urad dal (soaked overnight)
  3. 1/4 cup rajma (soaked overnight)
  4. Handful split moong dal (soaked an hour)

  9. 1 small cinnamon stick

  15. 1 onion chopped into slices
  16. 3-4 fresh green chillies chopped finely (adjust as needed)

  18. 5-7 garlic cloves chopped finely
  19. 1 medium size tomato chopped small
  20. as required Little kasuri methi (optional)
  21. as needed Salt
  22. 1/4 tsp turmeric powder
  23. 1/2 tbsp coriander powder
  24. 1/2 tsp cumin powder
  25. 1 tsp curry powder
  26. 1/4 tsp black pepper powder
  27. 1/4 cup milk
  28. 1/2 tsp garam masala
  29. 1 tsp fresh cream
  30. 1 tbsp butter
  31. as required Hot water to adjust consistency

Instructions to make to make Dal makhani

  1. In a pressure cooker, put the soaked dals, salt, turmeric powder, whole spices and water. Put few drops of oil. Cover the lid and pressure cook for 7-8 whistles.
    Keep aside and let it cool.
    As it cools, open the lid, remove the bay leaf and cinnamon stick and mash the dal slightly so that dal becomes thick.
  2. Next place a kadhai and heat it with oil. Put chopped garlic cloves, saute for some time. Next add grated ginger and green chillies. Saute. Next add onions, saute all together till onion turns brownish.
  3. Next add chopped tomato. Put salt, turmeric powder, coriander powder, cumin powder, curry powder, black pepper powder. Saute all together. Cook at slow flame till tomato turns mushy.
  4. As tomato is cooked, add kasuri methi and mix. Next add the boiled dal. Give a nice mix. Add milk. Mix. Then add garam masala. Mix and let it cook in medium heat for 2-3 minutes.
  5. Keep the consistency thick. Cover and keep for some time. It's ready!!
    Then transfer into a vessel. Put fresh cream. Add butter and serve hot hot.
    It goes well with roti/ rice.
